In that last entry I shared a little about how my son, Noah did while on a GF/CF diet and today I am going to my best to express how HARD it is to be on one.

Having a child on a Gluten and Casein free diet requires an enormous amount of attention and effort. Not only do you have to study the labels on the food you buy, but you can't just look for the words Gluten or Casein on them. You also have to watch for these variations of the two:

WHEW! Exhausted yet? Try actually getting any shopping done! There are several books and websites available that provide recipes and safe food ideas but the problem that remains is that many of the substitute ingredients or special pre-made foods are crazy EXPENSIVE. The fix however, is simple if you enjoy cooking. You can easily buy and prepare fresh meats, fruits, and vegetables and be completely in the clear. It isn't glamorous or exciting and it certainly isn't quick or easy. So basically, this special diet isn't something any child will really enjoy or any parent will get away with corners on.
